It is probably hidden under your dock. go to your dock preferences and move your dock to the left or right so you can move the folder back. and if its not there you can click and drag a copy back to the dock from the finder.

Well, you must have been in the Finder, a window where everything is shown - programs, files, etc. so, you might have just moved it out of the window and it disappeared. well, my mac is broken now (it's been 6 years of stable work for now, pretty old for the older generation of computers), so i can't tell you where exactly to look, but if you go to the Computer on the left side in the Finder, you'll see your hard drive. just wander around there, it should be somewhere in it. but don't open any programs/ files there. just look for the Documents folder, and see if that's correct folder, having all the same files that your original Documents folder had.
